Adobo Mushroom Tacos

Prep Time: 10 minutes | Cook Time: 20 minutes | Serves 2-4


  • 8 ounces Crimini mushrooms
  • 1 Tablespoon avocado oil or vegetable oil
  • 1 Tablespoon fresh lime juice
  • 1  Tablespoon dried oregano
  • 1 Tablespoons onion powder
  • 2 teaspoons garlic powder
  • 2 teaspoons ground cumin
  • 2 teaspoons organic cane sugar
  • 1¼ tsp. Morton kosher salt
  • 1 teaspoon cayenne pepper
  • corn tortillas


  1. Place a rack in middle of oven; preheat to 400°F.
  2. Roughly chop mushrooms then toss with oil, lime juice, oregano, onion powder, garlic powder, cumin, coconut sugar, salt, and cayenne in a medium bowl until mushrooms are well coated.
  3. Spread mushrooms out in a single layer on a parchment-lined baking sheet and roast until golden brown and crisp, 20–25 minutes.
  4. Build tacos with tortillas, mushrooms and your favorite toppings. Serve with lime wedges for squeezing over.
