Autumn Chard Salad
Prep Time: 15 minutes | Serves 4
Ingredients
- 1 bunch rainbow chard
- 1 small onion or shallot, very thinly sliced
- 2 apples or pears, thinly sliced
- ⅓ cup seeds or nuts, optional for "crunch"
- 3 Tbsp extra-virgin olive oil
- 3 Tbsp red wine vinegar
- 1 Tbsp finely chopped shallot
- 1 tsp coarse-grain Dijon mustard
- salt
- freshly ground black pepper
Instructions
- Roughly chop the chard- stems and all! - thinly sliced the onion or shallot and fruit of choice.
- Whisk together oil, vinegar, shallot, Dijon mustard, and ¼ tsp each of salt and pepper in a large serving bowl.
- Add to serving bowl with the vinaigrette and use your hands to massage well. The greens will be wilted down to about half the size when they're ready.
- Add onion, fruit, and seeds (if using) to the bowl.
- Serve immediately or let the salad rest, covered, for 30-60 minutes before serving.
