Autumn Chard Salad

Prep Time: 15 minutes | Serves 4

Ingredients

  • 1 bunch rainbow chard
  • 1 small onion or shallot, very thinly sliced
  • 2 apples or pears, thinly sliced
  • ⅓ cup seeds or nuts, optional for "crunch"
  • 3 Tbsp extra-virgin olive oil
  • 3 Tbsp red wine vinegar
  • 1 Tbsp finely chopped shallot
  • 1 tsp coarse-grain Dijon mustard
  • salt
  • freshly ground black pepper

Instructions

  1. Roughly chop the chard- stems and all! - thinly sliced the onion or shallot and fruit of choice.
  2. Whisk together oil, vinegar, shallot, Dijon mustard, and ¼ tsp each of salt and pepper in a large serving bowl.
  3. Add to serving bowl with the vinaigrette and use your hands to massage well. The greens will be wilted down to about half the size when they're ready.
  4. Add onion, fruit, and seeds (if using) to the bowl.
  5. Serve immediately or let the salad rest, covered, for 30-60 minutes before serving.
