Blackberry and Fennel Salad

Ingredients
- 1 head green butter lettuce, torn into bite-size pieces
- 1 small fennel bulb, trimmed and thinly shaved (reserve a few fronds for garnish)
- ½ cup fresh blackberries
- 2 Tbsp crème fraîche
- 1 tsp apple cider vinegar (or white wine vinegar)
- 1 tsp honey or maple syrup
- 1 Tbsp olive oil
- Pinch of salt and black pepper

Make the dressing: In a small bowl, whisk together crème fraîche, vinegar, honey, olive oil, salt, and black pepper until smooth and lightly thickened.

Assemble the salad: In a large bowl, combine butter lettuce and shaved fennel. Add dressing and toss gently to coat.

Add berries: Scatter blackberries over the top and toss very lightly once more to keep them intact.

Finish: Garnish with reserved fennel fronds. Serve immediately or chill briefly before serving.
