Blackberry and Fennel Salad

Ingredients

  • 1 head green butter lettuce, torn into bite-size pieces
  • 1 small fennel bulb, trimmed and thinly shaved (reserve a few fronds for garnish)
  • ½ cup fresh blackberries
  • 2 Tbsp crème fraîche
  • 1 tsp apple cider vinegar (or white wine vinegar)
  • 1 tsp honey or maple syrup
  • 1 Tbsp olive oil
  • Pinch of salt and black pepper

Instructions

  1. Make the dressing: In a small bowl, whisk together crème fraîche, vinegar, honey, olive oil, salt, and black pepper until smooth and lightly thickened.

  2. Assemble the salad: In a large bowl, combine butter lettuce and shaved fennel. Add dressing and toss gently to coat.

  3. Add berries: Scatter blackberries over the top and toss very lightly once more to keep them intact.

  4. Finish: Garnish with reserved fennel fronds. Serve immediately or chill briefly before serving.
