Cast Iron Bratwurst, Potatoes and Sauerkraut

Ingredients

  • 1/4 c olive oil
  • 4 bratwurst sausages, sliced into bite sized pieces
  • 3 gold potatoes, diced
  • 1 small onion, diced
  • salt and pepper, to taste
  • 1/2 tsp chopped or ground rosemary
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • 12 oz. sauerkraut, drained
  • your favorite mustard for serving, if desired

Instructions

  • Add the cooking oil to a large cast iron skillet and heat over medium.
  • Add potatoes, bratwurst pieces, diced onion and all herbs and seasonings EXCEPT salt. 
  • Cook, stirring occasionally, until the potatoes and bratwurst are cooked through (about 25 minutes).
  • Add drained sauerkraut and cook until heated through (about 5 minutes more). Taste for seasonings and add salt if needed.
