Cast Iron Bratwurst, Potatoes and Sauerkraut

Ingredients
- 1/4 c olive oil
- 4 bratwurst sausages, sliced into bite sized pieces
- 3 gold potatoes, diced
- 1 small onion, diced
- salt and pepper, to taste
- 1/2 tsp chopped or ground rosemary
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 12 oz. sauerkraut, drained

your favorite mustard for serving, if desired
Instructions

Add the cooking oil to a large cast iron skillet and heat over medium.

Add potatoes, bratwurst pieces, diced onion and all herbs and seasonings EXCEPT salt.

Cook, stirring occasionally, until the potatoes and bratwurst are cooked through (about 25 minutes).

Add drained sauerkraut and cook until heated through (about 5 minutes more). Taste for seasonings and add salt if needed.
