Chicken Salad

Ingredients:

  • Leftover roasted chicken, shredded
  • 1/3 cup finely diced celery
  • 1/3 cup finely diced red onion
  • 1/2 cup baby spinach finely chopped
  • 3 fresh parsley sprigs, finely chopped
  • 1/3 cup mayonnaise
  • 1/3 cup Greek yogurt
  • Salt & pepper, to taste

Instructions:

  • Combine all ingredients in a big bowl; stir until everything is well combined. Enjoy!

*Chill for at least 20 mins for optimal flavor.
