Everyday Side Salad
Prep Time: 7 minutes | Serves 4-6 (as a side dish)
Ingredients
Balsamic Vinaigrette
- 2 Tbsp balsamic vinegar
- 3 Tbsp extra virgin olive oil
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
Salad
- 1 head crisp lettuce - we recommend red or green leaf or a romaine
- 1-2 roma tomatoes
- 1 medium carrot
- 1/4 medium red onion
- 1 cucumber (optional)
Ingredients
- In a small jar with a tight fitting lid, shake the vinegar, oil, salt, and pepper until combined. Set aside.
- Wash, pat dry and thinly slice your lettuce head from the top of the leaves to the base. Add to a large serving bowl.
- Cut tomatoes into 1" pieces and add to bowl.
- Use a box grater to grate/shred your carrots and add to the bowl with the lettuce and tomatoes.
- Thinly slice red onion and cucumber (if using) and add to the salad bowl.
- Toss all the veggies and cover and refrigerate if not serving right away.
- When you’re ready to serve, toss the veggies again with the vinaigrette.
