Ingredients:

1-2 sweet potatoes, peeled & diced
- .5# crimini mushroms, chopped
- corn tortillas, warmed

1 Tbsp Olive oil

1 Tbsp chili powder
-
1 ½ tsp ground cumin
-
1 tsp sea salt and black pepper
-
½ tsp ground paprika
-
¼ tsp garlic powder
-
¼ tsp onion powder
-
¼ tsp crushed red pepper flakes
- ¼ tsp dried oregano
- 1/2 red onion, diced

1/3 cup water
- shredded cheese, for topping
- 1-2 tomatoes, diced *optional
- 2 to 3 green onions sliced *optional
Instructions:

Peel and dice sweet potatoes to bite size pieces, then roughly chop crimini mushrooms and onion.

In a bowl, combine chopped veggies with olive oil and spices.

Heat a skillet to medium-high, add seasoned veggies and sauté for 6 minutes.

Add 1/3 cup water, then cover for 2 minutes.

Sauté uncovered for 3 minutes. Warm tortillas up during this time.

Top tortillas with cooked veggies, cheese, onion, cilantro and any other desired toppings.
- Serve immediately & enjoy!
