Sheet Pan Brats & Roasted Vegetables
Prep Time: 15 minutes | Cook Time: 15-20 minutes | Serves 4-6
Ingredients
- 4 medium carrots
- 1 large bunch kale
- 1 medium yellow onion
- 1 gala apple
- 2 medium bell peppers
- 8 Journeyman Meat Co Fresh Bratwurst
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar, or more, to taste
- 4 cloves garlic, minced
- 1 ½ teaspoons dried thyme
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Set a large baking sheet in the oven and preheat to 425°F.
- Prep produce and add to a large bowl: chop carrots, kale, onion, apple and bell peppers into bite sized pieces.
- Add olive oil, balsamic vinegar, garlic and thyme; season with salt and pepper, to taste. Gently toss to combine.
- Carefully remove baking sheet, line with parchment and arrange vegetables into a single layer over parchment.
- Nestle brats among the produce.
- Place into oven and bake for 12-15 minutes, or until tender.
- Serve immediately.
