Sheet Pan Brats & Roasted Vegetables

Prep Time: 15 minutes | Cook Time: 15-20 minutes | Serves 4-6

Ingredients

  • 4 medium carrots
  • 1 large bunch kale
  • 1 medium yellow onion
  • 1 gala apple
  • 2 medium bell peppers
  • 8 Journeyman Meat Co Fresh Bratwurst
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar, or more, to taste
  • 4 cloves garlic, minced
  • 1 ½ teaspoons dried thyme
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. Set a large baking sheet in the oven and preheat to 425°F.
  2. Prep produce and add to a large bowl: chop carrots, kale, onion, apple and bell peppers into bite sized pieces.
  3. Add olive oil, balsamic vinegar, garlic and thyme; season with salt and pepper, to taste. Gently toss to combine.
  4. Carefully remove baking sheet, line with parchment and arrange vegetables into a single layer over parchment.
  5. Nestle brats among the produce.
  6. Place into oven and bake for 12-15 minutes, or until tender.
  7. Serve immediately.
