Springtime Whimsy Strawberry Salad
Prep Time: 5-8 minutes | Serves 4
Ingredients
- 1 head butter or similar style lettuce
- 1 bunch rainbow chard
- .5 pint strawberries
- 1 ounce radish microgreens
- drizzle olive oil
Dressing:
- 6 strawberries
- 1 tbsp Balsamic Vinegar
- 1 tsp honey
- 2 tbsp olive oil
- salt and pepper to taste
Instructions
- In a blender, blend 6 strawberries, Balsamic Vinegar, honey, olive oil and salt and pepper until smooth.
- Wash and dry rainbow chard, then remove leaves from stems.
- Roughly chop the leaves and add to a large serving or salad bowl with a drizzle of olive oil. Using clean hands, gently massage the oil into the leaves.
- Cut the chard stems into 1/2" pieces and add to the salad.
- Wash and dry lettuce, then remove the end and roughly chop. Add to the salad.
- Remove tops from strawberries and slice. Arrange over lettuce.
- Toss lettuce and strawberries with dressing and top with radish microgreens for a hint of spice and whimsy!
