10-Minute Armenian Cucumber and Tomato Salad

Total Time: 10 minutes | Serves 4-6


  • 2 Armenian Cucumbers peeled and diced
  • 1 Cup Cherry Tomatoes halved
  • 10 fresh basil leaves
  • 1 bunch green onions both whites and greens, chopped
  • ⅓ cup olive oil
  • 1 lemon juiced
  • 1 teaspoon sea salt
  • 2 Tablespoons sumac (or Za'tar or lemon pepper)


  1. Dice cucumbers, halve tomatoes, roughly chop basil and green onions then add to a large mixing bowl.
  2. Add in your wet ingredients, salt and sumac and toss to fully combine.
  3. Serve salad immediately, or store any leftovers in an airtight container in the fridge for up to five days. Enjoy!
