Beet & Nectarine Salad


  • 2 medium beets, peeled & grated
  • 2 nectarines, pitted & sliced
  • 1/2 green leaf lettuce, chopped
  • 4 ounces crumbled goat cheese
  • 2 Tbsp chopped red onion


  • 1 Tbsp balsamic vinegar
  • 1/2 Tbsp honey
  • 1/4 cup olive oil
  • 1/2 tsp Dijon mustard
  • 1 clove garlic minced
  • Salt & pepper to taste


  1. Make the dressing by combining the dressing ingredients in a mason jar. Cover and shake until well combined.

  2. Add chopped spinach to a bowl. Peel beets and cut off the ends, then grate and add them to the salad bowl. The beets will turn everything pink, so if you don't want that, toss the salad with dressing THEN add the cheese and nectarine slices on top. Serve immediately!
