- 3 farm fresh eggs
- 2 Tbsp unsalted butter
- 1 handful shredded mozzarella cheese
- 2-3 slices sourdough bread, optional
- Heat a skillet or frying pan to medium heat.
- Melt butter, then crack eggs over butter. Resist mixing for 1 minute!
- Mix eggs and cook for 1 minute.
- Fold eggs until almost done cooking, about 2 minutes.
- Turn heat off and fold in cheese mixture until melted, about 1 minute.
- Enjoy scramble over toast!
