Fresh Strawberry & Asparagus Salad

Ingredients

For the salad

  • 1 head red leaf lettuce
  • 1 pint fresh strawberries
  • 1/2 bunch asparagus spears
  • 3 Tbsp Pumpkin seeds, optional - you can also use your favorite nut or another seed for this "crunch" element!
  • 2 stalks of spring onions
  • 1-2 pinches of salt

For the dressing

  • 2 tsp mustard (heaping)
  • 2 Tbsp good quality olive oil
  • 2 Tbsp balsamic vinegar
  • 1-2 pinches of pepper

Instructions

  1. Wash and pat dry the asparagus, cut off the ends of stalks and then cut into smaller pieces - about 2" long.
  2. Add the asparagus to a large pan of water with a pinch of salt and cover with a lid.
  3. Turn the heat to high and gently heat the asparagus for 10 minutes. You will know when it is done if you can pierce it with a knife.
  4. While the asparagus is cooking, prepare the rest of the salad. Wash, dry, and chop the lettuce and add to a bowl.
  5. Wash and de-stem the strawberries and cut them into either halves or quarters and add to your bowl of lettuce.
  6. Wash and finely chop the spring onions and add along with the pumpkin seeds if using.
  7. Combine all dressing ingredients in a mason jar and shake (or mix in a bowl and use a spoon).
  8. Once the asparagus is done, add to the salad, add the dressing and mix everything through. Serve immediately and enjoy!
