Fresh Strawberry & Asparagus Salad
Ingredients
For the salad
- 1 head red leaf lettuce
- 1 pint fresh strawberries
- 1/2 bunch asparagus spears
- 3 Tbsp Pumpkin seeds, optional - you can also use your favorite nut or another seed for this "crunch" element!
- 2 stalks of spring onions
- 1-2 pinches of salt
For the dressing
- 2 tsp mustard (heaping)
- 2 Tbsp good quality olive oil
- 2 Tbsp balsamic vinegar
- 1-2 pinches of pepper
Instructions
- Wash and pat dry the asparagus, cut off the ends of stalks and then cut into smaller pieces - about 2" long.
- Add the asparagus to a large pan of water with a pinch of salt and cover with a lid.
- Turn the heat to high and gently heat the asparagus for 10 minutes. You will know when it is done if you can pierce it with a knife.
- While the asparagus is cooking, prepare the rest of the salad. Wash, dry, and chop the lettuce and add to a bowl.
- Wash and de-stem the strawberries and cut them into either halves or quarters and add to your bowl of lettuce.
- Wash and finely chop the spring onions and add along with the pumpkin seeds if using.
- Combine all dressing ingredients in a mason jar and shake (or mix in a bowl and use a spoon).
- Once the asparagus is done, add to the salad, add the dressing and mix everything through. Serve immediately and enjoy!
