Garlic & Herb Smashed Potatoes

Ingredients:

  • 1lb baby gold potatoes
  • 3 tbsp olive oil
  • 4 cloves garlic , crushed
  • 1tsp thyme, rosemary, oregano & basil
  • salt & pepper

Instructions:

  • Preheat oven to 425°F.
  • Bring a large pot of water to boil, then add potatoes and cook for 15-25 minutes, until fork tender.
  • While potatoes are cooking, mix the oil, garlic, and spices together.
  • Drain potatoes, place them on a lined baking sheet and gently smash them with the back of a fork.
  • Evenly drizzle or brush olive oil on top of the potatoes, then season with salt and pepper.
  • Bake for about 20-35 minutes, or until desired crispness.
