Garlic & Herb Smashed Potatoes
Ingredients:
- 1lb baby gold potatoes
- 3 tbsp olive oil
- 4 cloves garlic , crushed
- 1tsp thyme, rosemary, oregano & basil
- salt & pepper
Instructions:
- Preheat oven to 425°F.
- Bring a large pot of water to boil, then add potatoes and cook for 15-25 minutes, until fork tender.
- While potatoes are cooking, mix the oil, garlic, and spices together.
- Drain potatoes, place them on a lined baking sheet and gently smash them with the back of a fork.
- Evenly drizzle or brush olive oil on top of the potatoes, then season with salt and pepper.
- Bake for about 20-35 minutes, or until desired crispness.
