Grilled Steak Skewers


For the Steak:

  • 1 pound steak strips
  • ½ Tbsp ground cumin
  • 1 tsp salt
  • Fresh ground pepper, to taste

Chimichurri Sauce:

  • ½ cup extra virgin olive oil
  • ½ cilantro bunch, roughly chopped
  • 2 cloves garlic
  • 2 Tbsp red wine vinegar
  • 2 Tbsp lemon juice
  • 1/2 tsp red pepper flakes, plus more for garnish, optional
  • salt & pepper, to taste


  1. Soak your skewers in warm water for 20 minutes.
  2. Preheat grill to medium-high and season the steak strips with cumin, salt, and pepper.
  3. Thread the steak onto the skewers, accordion style. Set aside.
  4. In a blender add chimichurri ingredients and pulse until thoroughly combined, then set aside.
  5. Brush the grill grates with olive oil.
  6. Place steak skewers on the grill and cook for about 2 minutes per side, or until browned and grill marks appear.
  7. Remove steak skewers and brush steak with chimichurri sauce.
  8. Garnish with red pepper flakes, if you like, and serve.
