Grilled Zucchini

Prep Time: 5 minutes | Cook Time: 5 minutes | Serves: 4-6


  • 1 pound zucchini
  • 1-2 Tablespoons Extra Virgin Olive Oil
  • 1/2 teaspoon each garlic powder, salt, pepper


  1. Preheat a grill or grill pan to medium.
  2. Slice zucchini lengthwise into 1/4" thick planks.
  3. Place the zucchini on a large plate or tray, drizzle with olive oil, and sprinkle with the garlic powder, salt and pepper. 
  4. Grill for 1 to 3 minutes per side, or until char marks form and the zucchini is tender but still has some bite.
  5. Remove from the grill and and serve.
