Roasted Fingerling Potatoes Recipe


  • 1 ½ pounds fingerling potatoes
  • 5 cloves garlic, crushed
  • 3 Tablespoons extra-virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper


  1. Place a rimmed baking sheet on the middle oven rack. Preheat the oven to 450°F.
  2. Cut potatoes in half lengthwise and add to a large bowl. Set aside.
  3. Remove peel from garlic and crush. Add to bowl with cut potatoes.
  4. Add oil, salt and pepper to the bowl and toss to combine.
  5. Remove hot baking sheet from the oven.
  6. Spread potato mixture on the hot baking sheet and roast, stirring halfway through, until tender and golden brown, about 20 minutes.
  7. Serve hot!
