Roasted Glazed Carrots


  • 1 carrot bunch
  • 1 Tbsp olive oil
  • 1/4 tsp fine sea salt
  • carrot tops, chopped for garnish


  • 1 Tbsp olive oil
  • 3 cloves garlic, minced
  • 2 Tbsp honey
  • 2 Tbsp soy sauce
  • 1 Tbsp hoisin (optional)
  • 2 Tbsp sesame oil
  • 1 tsp rice vinegar


  • Preheat oven to 425°F. Line a baking sheet with foil or parchment paper.
  • Wash and dry carrots thoroughly and place onto the baking tray, drizzle with olive oil, sprinkle with salt. Toss to evenly coat carrots with oil.
  • Bake for 20 mins, until the carrots just start to turn tender.
  • While carrots roast, mix all ingredients for the glaze. Drizzle glaze over carrots and bake for and additional 6 mins.
