Roasted Glazed Carrots
Ingredients:
- 1 carrot bunch
- 1 Tbsp olive oil
- 1/4 tsp fine sea salt
- carrot tops, chopped for garnish
Glaze:
- 1 Tbsp olive oil
- 3 cloves garlic, minced
- 2 Tbsp honey
- 2 Tbsp soy sauce
- 1 Tbsp hoisin (optional)
- 2 Tbsp sesame oil
- 1 tsp rice vinegar
Instructions:
- Preheat oven to 425°F. Line a baking sheet with foil or parchment paper.
- Wash and dry carrots thoroughly and place onto the baking tray, drizzle with olive oil, sprinkle with salt. Toss to evenly coat carrots with oil.
- Bake for 20 mins, until the carrots just start to turn tender.
- While carrots roast, mix all ingredients for the glaze. Drizzle glaze over carrots and bake for and additional 6 mins.
