Romanesco Sheet Pan Breakfast

Ingredients:

  • 1 romanesco cauliflower, remove outer leaves
  • 3 eggs
  • 1 tablespoon olive oil
  • 1 tablespoon ground smoked paprika 
  • salt and pepper

Instructions:

  1. Preheat oven to 350°F.
  2. Cut romanseco into 1/4 to 1/2 inch thick slices from core to tip.
  3. Lay slices flat on an oven tray.
  4. Drizzle olive oil over romanesco and season with salt and pepper.
  5. Roast for 15 minutes.
  6. Heat olive oil in a non-stick pan to medium and crack and fry the eggs to desired doneness.
  7. While the eggs are frying, remove romanesco slices from the oven and plate individually.
  8. Top romanesco slices with fried egg and dust with smoked paprika and salt. Serve HOT!
