Pork Lettuce Wraps Recipe

Ingredients

For the Lettuce Wraps:

  • 1lb Stemple Creek Ranch ground pork
  • 1 red pepper, optional
  • 3 large carrots
  • 1 small yellow onion
  • Red Butter lettuce leaves, for serving
  • Topping: scallions, cilantro and crushed peanuts for garnish

For the Sauce:

  • 2 teaspoon ground ginger, optional
  • 2 garlic cloves, minced
  • 1 Tablespoon honey
  • 2 Tablespoon coconut aminos or soy sauce
  • 2 Tablespoon peanut butter or favorite nut butter
  • 1 Tablespoon rice wine vinegar
  • 2 teaspoon sriracha, more or less to adjust spice level

Instructions

  1. Add all of the sauce ingredients to a medium bowl and whisk well. Set aside.
  2. Use the large side of a cheese grater to grate your carrots. Add to a bowl and set aside.
  3. Dice the onion and red bell pepper (if using). Add to the same bowl as the carrots and set aside.
  4. Add 1 tablespoon olive oil to a large skillet over medium-high heat. Once it's hot, add the ground pork and cook until no pink remains. To make it crispy, stir occasionally to allow the pork to sit in the hot oil before stirring. This crisps the outsides to a golden brown color.
  5. When the pork is done, add the water chestnuts, red pepper, carrots and onion and cook until soft, 5-7 minutes.
  6. Stir in the sauce until it's completely combined then turn the heat down to medium-low and simmer for 8-10 minutes to thicken and develop the flavor.
  7. Remove the pan from heat then serve inside the lettuce cups. You may need to double up the lettuce cups for a sturdier wrap. Top with chopped green onion, cilantro and peanuts if desired.
