- 4-5 gold potatoes
- 2-3 Tbsp olive oil
- Salt & pepper, to taste
- Preheat oven to 425°F.
- Wash potatoes leaving skin on, then cut into 1/2" thick spears.
- Let potatoes soak in cold water in the sink or in a bowl for at least 30 minutes. Remove from water and dry very well. Don't skip this step!
- Toss with oil and seasonings. Spread evenly in a single layer on a parchment-lined sheet pan.
- Bake for 30 minutes, turning halfway through. Serve hot!
